One of my most favorite things to make is Turkey Taco Bowls! My fiancé (Victor) and I both love Mexican food and this is so easy to make. We are also pretty addicted to Chipotle and this is our closest healthier version of that. My other favorite thing about taco bowls is Victor and I both like different toppings in ours and it’s easy to mix and match them. Usually, if something is more than 5 ingredients or takes longer than 15 minutes to prep, I immediately disregard it except these! Taco bowls are also super easy to use for meal preps for the week.
The ingredients that I use in my taco bowls include a good Spanish or lime rice (depends how I feel that day), ground turkey, taco seasoning, shredded lettuce, cheddar cheese, avocado, and jalapeno slices. As I mentioned you can mix and match toppings like adding hot sauce, sour cream, pico de gallo, black beans, pinto beans, salsa, the list just goes on and on. Take out what you don’t want and add what you do! If packing up to eat later in the week or next day the toppings should be added fresh for better taste.
I only use about half of the taco seasoning packet per pound of ground turkey.
The rice just follow the directions on the box and or bag in this case. If you don’t have time to cook the rice or just don’t want to you can always try the microwave 90 second rice 😉 Yes I’ve done it many times!
Now it’s time to make your bowl in whatever order want!
Serves about 4
9 oz bag of rice
2 pounds of ground turkey
2 tablespoons of olive oil
1 (1 oz) packet of taco seasoning
1 cup of shredded cheese
3 cups of shredded lettuce
Handful of jalepeno slices (by preference)
In a large saucepan cook rice according to instructions.
While the rice is cooking, in another large pan heat up some olive oil. Add ground turkey and cook until browned. Once it has browned stir in the taco seasoning and cook for about 3 more minutes. I do not drain the fat as I feel the seasoning spreads out more evenly with it.
