Weekend recap


This weekend was very busy for me. Friday I had to work most of the day. Then Friday night we headed out for some time with friends to watch Christmas movies. My friend Lauren actually made a drinking game for the movie we were watching, which was Jingle all the Way with Arnold Schwarzenegger. The game included things like taking a sip everytime Arnold said Jamie or talked to himself. This isn’t my favorite movie by any means but it was fun to get in the holiday spirit with friends.


I worked during the day on Saturday as well. Saturday night was our annual Holiday get together with my college friends. I’m happy that we still make the time to stay in touch with one another 6 years after graduating even if it is only a few times a year. I am a believer that if you truly care about someone you will make the time for them the best you can. Our night consisted of a big turkey dinner, some fun games, and lots of laughs!


I woke up Sunday morning feeling the repercussion of the night before. It was pouring rain and we were scheduled to cut down our Christmas tree. We go to a cute little tree farm about 40 minutes away from our home. I wanted to reschedule it so bad, but it was really the only day we could do and I wanted to decorate the tree. So in the pouring rain we went and cut down our tree and had some hot chocolate at the tree farm.  After getting home I realized the tree looked much smaller than it actually was and takes up most of our living room!

I did some decorating while Victor watched football. Later that evening I didn’t feel well so Victor, Lucy, and I just relaxed and watched Christmas movies the rest of the night. We will decorate the tree later this week.

A busy weekend calls for another easy recipe. This weekend I made some baked buffalo chicken tenders in the oven.

A sports bar near our house makes the most delicious baked buffalo tenders smothered in buffalo sauce. I thought I would attempt to copy theirs making it as simple as possible.

I started with Chicken already cut into tenders and added them to a 3 qt casserole dish. I then took 1 tablespoon of my favorite chicken seasoning along with a tablespoon little baking powder and mixed it together to place evenly on top of the chicken. I mixed one cup of Franks Red Hot Wing Sauce with 2 tablespoons of honey to add a little sweetness. I dumped the sauce over the chicken to cover it completely.

Pop it in the oven for 45 minutes. Victor and I agreed that it came out so good and was pretty close to the restaurant I was trying to copy. I was quite proud as this was my first time just trying something I thought might work.

I love quick prep times and then sticking it in the oven while I try to get some other things done, which is usually cleaning. I can never keep up with cleaning with being so busy all the time but things have gotten much better with some new-found tricks I’ve learned, which I will share on a later blog post :).


1.5lb of chicken cut into strips

1 Tablespoon of baking powder

1 Tablespoon of favorite chicken seasoning

1 cup of Franks Red Hot wing sauce

2 tablespoons of honey


  1. Preheat oven to 400 degrees
  2. Mix the baking powder and Chicken seasoning
  3. Place the cut chicken tenders into a baking dish in a single layer (I used a 3qt dish)
  4. Cover the chicken with seasoning and baking powder mix
  5. In a bowl Mix the Franks Red Hot sauce and honey together
  6. Pour the sauce over the chicken so that its covered
  7. Bake for 45 minutes
