Crock pot Butternut Squash Soup

No weekend recap this week as it was pretty boring; I worked most of the weekend. I did a quick stop at a Christmas party after work Saturday and my little laila`s 2nd birthday party on Sunday.

I have been craving butternut squash soup recently, so I found a super easy recipe to make it myself in the crock pot. It’s a dump it, set it, and forget it type recipe. My favorite!

There is a little bit of prep work including cutting up onions, apples, and squash. To save time I buy pre cut squash and onion. Directions are as easy as it gets, dump all the listed ingredients excluding the cream in the pot. Set it to cook while at work or doing daily activities. One done, take a fork or whisk to blend the soup the best you can. It can be a little clumpy after. If you don’t like the clumps you can use a blender to blend it up better. Once blended add the cream and adjust curry to taste.

 


Butternut squash is full of vitamin E and potassium. If your looking for a delicious meatless recipe this is perfect. It can also be pared with a delicious grilled cheese. Having soup, relaxing at home, while watching movies is always a favorite thing of mine in the winter.

Ingredients

2 lbs of butternut squash chopped into small chunks
1 large yellow onion diced
2 granny smith apples chopped into small chunks
2 carrots cut into chunks
2 tablespoons of brown sugar
1 tablespoon of curry powder (you can add more for taste)
1/3 teaspoon of cinnamon powder
1 tablespoon of minced garlic
2 cups of vegetable broth
½ cup of heavy cream
Salt and pepper to taste

Directions

  1. Dump all ingredients Except  the cream into the crockpot.
  2. Cook on low for 7-8 hours or High 4-5 hours
  3. Once cooked,  squash can be softened with a fork or you can also use a blender to blend the soup more
  4. Stir in the cream and adjust curry powder to your liking.
