Easy Blender Banana Muffins

 

I don’t normally love snow but in the case of last Sunday I was actually pretty excited as I had no plans and nowhere to be so I could have an excuse to hunker down at home all day. Always being on the go I got a lot done being at home for the day, some cleaning, organizing, you know the stuff that a normal schedule doesn’t always allow.

I started off the morning making some delicious healthy banana muffins. They are so easy to make and on the healthier side.

Start with these ingredients 1/2 cup of brown sugar, 2 eggs, 2 ripe bananas, 1 tsp of vanilla extract, 1/4 cup of vanilla greek yogurt, 1 cup coconut milk, 3 cups of quick oats, 1/2 tsp of ground cinnamon,  1 tsp of baking powder.

Blend the ingredients in a blender.

As a side note I used my Ninja Bullet so I had to only add one cup of quick oats with the rest of the ingredients blend it up and then add the other two after. The batter was so delicious. I had to finish off the extra with a spoon.

Once Blended add the batter amount a 12-cup muffin pan.

Bake for 25 minutes at 350 degrees.

I’m excited to try these with blueberries next !

Ingredients

  • 1/2 cup brown sugar
  • 2 eggs
  • 2 ripe bananas
  • -1 tsp pure vanilla extract

    -1/4 cup of vanilla greek yogurt

    -1 cup unsweetened coconut milk

    -3 cups quick oats

    -1/2 tsp of ground cinnamon

    -1 tsp of baking powder

Directions

  1. Using a blender blend all the ingredients together.
  2. Divide the batter among a 12 cup muffin pan.
  3. Bake for 30 min at 350 degrees

After getting some things done I snuggled up on the couch with my little one and binged some Netflix.

Has anyone seen Dirty John? So interesting I love shows based on true stories. Definitely an eye opener to be careful on who you trust.

For linner ( some time between lunch and dinner ) I made some good ol comfort food grilled cheese and tomato soup.

Honestly I did some snacking all day, enjoyed some wine, watched a movie and took a much needed hot bubble bath. I did some self-care on my face with the Blaq hydrogel eye mask and ended night with the pats game and what a game it was! AFC champs going to the Super Bowl! I must say it was a great day.

 

Snoozing update:

Starting week 3 today and I did hit snooze two days last week. I am a little upset with myself but it is the start of a new week so I plan to keep going all this week without hitting snooze. Same as last week I don’t feel any different when not hitting snooze its more I can get more things done in the morning and feel more productive. When I am more productive in the morning that same feeling lasts all day.
