Shortcut Cauliflower Fried Rice

I made the most delicious and quick cauliflower fried rice and I had to share it with you all. This is the perfect side to make for when you’re in a pinch or just have a busy night. You can add a protein and make it a meal.

All you need is microwave steamed vegetables (I used Steamfresh mixed vegetables ) and already made cauliflower rice. You can of course make your own rice but if you’re in a time crunch this is perfect. Most grocery stores have it in the prepared food section or in the frozen vegetable section.

Heat up cauliflower according to directions on the bag.

Add 1 tablespoon of coconut oil on a large skillet over medium high heat. Once warm add in your cauliflower.

Heat up vegetables according to directions on the bag.

Make space in the middle of the cauliflower to add two eggs.

Stir the eggs until scrambled and mix them in with the cauliflower.

Add in cooked vegetables and mix well.

Add in salt and pepper to taste, 1/2 teaspoon of garlic powder and 1/4 cup of coconut aminos.

and that’s it ! Super easy right?

 

Shortcut Cauliflower Rice

Ingredients

  • Tablespoon of coconut oil
  • 2 Eggs
  • Bag of Microwavable Cauliflower Rice (feel free to of course make your own)
  •  Bag of Microwavable Mixed Vegetables
  • Salt and Pepper to taste
  • 1/2 Teaspoon of garlic powder
  • 1/4 cup of coconut aminos (or soy sauce)

Directions

  • Cook Cauliflower and mixed vegetables according to directions on the bag.
  • Heat large skillet to medium high heat and add 1 tablespoon of coconut oil.
  •  Add the cauliflower to the pan.
  • Push cauliflower to the side of the pan creating a space in the middle.
  • Add the two eggs to the center and stir together until scrambled.
  • Once scrambled mix them in with the cauliflower.
  • Add in the vegetables and stir to combine.
  • Add in the salt, pepper, garlic powder, and coconut aminos. Mix to combine and enjoy!
