I made the most delicious and quick cauliflower fried rice and I had to share it with you all. This is the perfect side to make for when you’re in a pinch or just have a busy night. You can add a protein and make it a meal.
All you need is microwave steamed vegetables (I used Steamfresh mixed vegetables ) and already made cauliflower rice. You can of course make your own rice but if you’re in a time crunch this is perfect. Most grocery stores have it in the prepared food section or in the frozen vegetable section.
Heat up cauliflower according to directions on the bag.
Add 1 tablespoon of coconut oil on a large skillet over medium high heat. Once warm add in your cauliflower.
Heat up vegetables according to directions on the bag.
Make space in the middle of the cauliflower to add two eggs.
Stir the eggs until scrambled and mix them in with the cauliflower.
Add in cooked vegetables and mix well.
Add in salt and pepper to taste, 1/2 teaspoon of garlic powder and 1/4 cup of coconut aminos.
